       "But fat is what makes meat taste good," I said.He hung his head."Yeah,I know."
       He moved closer to me."Hang on,"he said. "I'll be right back." Then he disappeared into another room.What the butcher returned with was actual meat,with some actual white material in it and around it.
       Lean meat is in when some food experts are rethinking their war against fat.Stores display only lean meat for fear that they seem unconcerned about their customers health.People fear fat.
       "People fear food, " corrected my butcher.I knew exactly what he was talking about.
       Some time ago I asked online readers to vote on several matters of personal preference,one of which was how they liked their hamburger cooked.The results were toward well-done,which surprised me,as most of my readers lead a modern lifestyle.
       I later learned what had happened with the hamburger vote:Most of the readers actually prefer underdone meat but "burn" their hamburgers for fear of some food-borne illness.One reader seriously told me that unlike steak(肉排)where 87 percent of the meat is inside and thus clean,ground meat(碎肉)is 100 percent deadly.So he cooks the danger out of it,until it is black outside,gray in the middle,without any taste.
       I don't get any of this.Food should not be something that you must kill before it kills you.So to all the people of the world who are afraid of eating food the way it should be eaten,I just want to leave you with a thought:
       If you are very careful about what you eat,you might be able to lower the amount of certain unwanted things.But you can t avoid eating them altogether,because they are everywhere in our food.

  • 25.I went on a whale-watching tour when I was on holiday in Hervey Bay.It was amazing.The captain stopped our boat 100 metres from where two humpback whales(座頭鯨) were playing.
       The crew on our whale-watching boat told us,the passengers,to make a lot of noise and wave our arms to attract the whales interest.It sure did.Two adult humpback whales came right up to our boat,swam under it and around it,and floated alongside,looking at us.The whales were so close we could have reached out to touch them.
       We could see other boats and whales in the Bay.All whale-watching boats have to follow strict rules to protect the whales.The rules were established by the Environment Protection Agency.The rules state that if one boat is within 300 metres of a whale no other boat is allowed to approach the whale.Boats are not allowed to approach any whales head-on,get between any whales in a group,or separate a mother from her baby,and they have to be careful not to bother the whales in any other way.Helicopters aren't allowed for whale watching and other aircrafts have to stay 300 metres away.All these are in the interest of whales safety.
       While on the tour I learned that humpbacks travel through Hervey Bay again on their way back south to Antarctica to feed on krill(磷蝦).Obviously the Antarctic winter is too cold for whale babies because they don't have enough blubber(鯨脂) yet to survive there.The humpback migration from Antarctica up the Queensland coast is one of the longest migrations in the animal kingdom and the journey to Antarctica is dangerous and tiring for whale babies.The baby travels following its mother and drinks her rich milk to fatten up.Older whales don't usually eat anything as they migrate.They must be very hungry by the time they get back to Antarctica!
      Our boat had a special microphone so we could hear the males singing.It was unbelievable.I love whales.
       They are beautiful and playful.
